Italian Sausage and Sweet Potato

Since I work in the evenings, I find myself trying to make things for dinner that are easy to reheat for my boys. This was SO easy and I made quite a dent in it before leaving for work. It was awesome!
Ingredients:
2 medium sweet potatoes, peeled and diced
1 medium onion, diced
1 lb sweet italian sausage (make sure that there is no sugar or artificial ingredients. I found these at Trader Joe’s)
salt and pepper to taste

Remove the sausage from the casings and brown in a skillet. Put the sausage on a plate or in a bowl and set aside. Add the sweet potato and onion to the skillet and cook for about 20 minutes. If there are a lot of brown bits on the bottom, pour a few tablespoons of water into the pan so that the bits come right off the bottom. They add a great flavor to the dish. Be sure that your burner isn’t on high enough to blacken the bits at the bottom. Season the onion and potato with salt and pepper. Once the potatoes are fork tender, add the sausages back into the skillet for two minutes. This is great leftover!

  1. I doubled this recipe and brought it to work last night. It filled my very big slow cooker that I used to keep it warm. Everyone loved it! I had so many people asking for the recipe! And the best part is that I was able to set aside some of it to eat today. Thanks for the great recipe!

      1. I would consider this one of this best recipes I’ve ever made! Thank you so much for posting. Just a suggestion…I added some green and red peppers and cooked them with the sweet potatoes and onion. Some people don’t like peppers but if you do they pair very well with the other ingredients. Thanks again!
